This product is a white, free-flowing powder. Each gram of encapsulated material contains 800 mg of calcium propionate within a distilled monoglyceride matrix. This product enables bakers to elevate the calcium propionate levels without the need for additional yeast, or they can maintain existing levels while reducing yeast usage. The monoglyceride coating serves a dual purpose:it releases calcium propionate during baking and also functions as a crumb softener.
