    Pizza Cheese Typical target pH at cooker/stretcher: 5.2 ± 0.5

    0.5 - 1 unit / 1000 liters (2275 lbs.) (this may need to be adjusted depending on milk preparation and/or process conditions)

    Fermentation time from coagulant addition to cooker/stretcher will be set by the dairy to fit process parameters and target composition and functionality.

    The CP-120 series is ideally suited for the production of many types of pasta filata cheeses including high through-put mozzarella for pizzas and string cheese.

    Specific functionalities can be further optimized and enhanced in combination with our coagulants and selected adjuncts from the DSM portfolio.

    Acidification Curves:

    Laboratory activity results: 2% fat HTST milk, inoculated 1U/1000L. Typical pizza cheese temperature profile 35 ̊C (95  ̊F) for 70 min then 43 ̊C (109.4  ̊F).

    NB. The curves above are obtained in experimental laboratory conditions and are shown for illustration purposes only.

    General Recommendations for Use:

    **Do not thaw pouches of pellets prior to use**

    Frozen culture in pouches thaws quickly, minimize exposure time outside of frozen conditions. It is very important that the entire package of pellets is used all at once.

    Due to varying densities of the pellets, these packages do not contain uniform blends so use of partial packages may result in inconsistent product performance.
