CAPALASE® K is a standardized natural flavor-producing enzyme (triacylglycerol lipase) derived from pregastric caprine (goat) tissues. It has an activity of 13.5 LU (Lipase Units) per gram. It's important to note that the recommended dosage for EMC (Enzyme-Modified Cheese) is 5 to 10 times higher compared to the dosage used in cheesemilk. It is advisable to start with a low to medium dosage in small-scale trials to determine the dosage that best fits the desired taste and flavor profile, and then establish the optimal dosage accordingly.

    Dosage Information
    • The dosage of CAPALASE® K strongly depends on the type of application; the ripening time and the desired flavour profile.

    For 1,000 lbs.of cheese milk:

    • 0.15 – 0.30 oz (mild flavor)
    • 0.60 – 0.80 oz (medium flavor)
    • 1.5 oz or higher (strong flavor)

    For 1,000 liters of cheese milk:

    • 10 - 20 grams (mild flavor)
    • 40 - 55 grams (medium flavor)
    • 70 grams or higher (strong flavor)

    Storage Conditions and Shelf Life
    • The product should be stored in the original sealed container.
    • Product may be shipped non-refrigerated, but should be stored at <50°F/10°C.
    • Kept in its original packaging and under the recommended storage conditions, the DSM animal enzyme has a shelf life of 12 months.
    • When stored frozen (-25 to -18 °C), the shelf life can be increased to 24 months from the date of production.
    • The loss of activity is less than 10% during the shelf life period.
