- Avena Best Pea Hull Fiber 200 is an effective binder when incorporated at 5% in ground meat, processed meat, and plant-based alternatives. Blended with dry ingredients, or injected into whole muscle, Avena Best Pea Hull Fiber manages moisture and fat levels, leading to reduced shrinkage and improved juiciness, even when under a heat lamp or in a steam table.
- Adding Avena Best Pea Hull Fiber 200 (TDF 90%) improves structure and can supply enough dietary fiber per serving for a ‘high fiber’ claim.
- Adding 3% Avena Best Pea Hull Fiber 200 © into ground beef products (burgers, pizza toppings, meat filling or taco meat) improves juiciness through enhancing retention of fat and moisture when compared to an all-beef product. This inclusion decreases cost while improving processability, eating quality, shelf life and hold time of finished product under a heat lamp or in a steam table.
