- Avena Best Pea Hull Fibers (TDF 90%) 125 is ready-to-eat (RTE) functional ingredients for creating clean-label, allergy-friendly, bakery, snacks, meat and plant-based foods and beverages. These dietary fibers are minimally processed from the hulls of sustainably grown, naturally gluten-free, non-GMO peas. These upcycled ingredients provide a boost of fiber and are traceable right back to the farm.

This addition provides an increase of 2.5g of fiber per 30g serving. It requires a water adjustment of 2.44g/g fiber in order to produce a dough with good handling characteristics.
- Incorporated at 5%, Avena Best Pea Hull Fiber 125 not only increases the level of dietary fiber but provides functionality, acting as a nucleation agent in the extrusion process. In addition, the water holding properties of Avena Best Pea Hull Fiber 125 facilitate dough development. The bland flavor allows for inclusion at higher values.
- Avena Best Pea Hull Fiber 125 can be used as an excellent dietary fiber to enrich and fortify your standard bread recipe. It may be used to make dietary fiber claims on nutritional labels in the UK, the EU, Canada, the US and throughout the world.
- Avena Best Pea Hull Fiber 125 © can replace instant starch and gums in a chicken breast glaze application. Used as a one- to-one replacement for gums to improve cook yields.
- Avena Best Pea Hull Fiber 125 © has a less glossy appearance with a more golden color. In addition, Avena Best Pea Hull Fiber 125 © improves quality during freeze-thaw stress.
- Incorporating 1.5 to 5% Avena Best Pea Hull Fiber 125 © into fresh beef sausages creates desirable juiciness and good texture with improved bite. Yield is increased by ≤6% which results in a cost reduction.
