This product is a food ingredient in powder form consisting of long-chain chicory inulin. In comparison to standard Orafti®HP, This product exhibits greater gel strength when used for fat substitution applications at elevated temperatures. Most fructose chains are capped by a glucose unit. Long-chain inulin is derived by eliminating shorter-chain inulin from chicory inulin.
